When consumers think about beans, products such as soups or hummus-style dips probably come to mind. Today, however, there is a growing array of new uses for beans in processed foods.

Take, for example, a Date & Almond Breakfast Bar, showcased by ADM, Booth 2642. This prototype, a good source of fiber, is made with VegeFull™ bean powder (along with Prolite® wheat protein isolate and NovaLipid™ soybean oil). This line of pre-cooked, ready-to-use bean ingredients increases their convenience for food processors. The wide range of products include pinto, black, navy, red, and other varieties in such forms as bean powders, grits, pieces, and whole. They can help increase protein and fiber content in formulations, while adding texture, bulk, color, and versatility to the formulation.

In addition to its novel breakfast bar, ADM is unveiling other prototypes that demonstrate the functionality and nutritional value of its ingredients. Sweet ‘N Crunchy Sesame Mix is made with Sweet ‘n Neat® dry honey powder, which provides a touch of sweetness to this sweet and salty snack mix. Triple Chocolate Brownie contains Ambrosia® chocolate chunks and DeZaan® cocoa powder, along with chocolate fudge icing for a true indulgent treat. And Oats & Crisp Bar, a good source of both protein and fiber, features NutriSoy® high-protein crisps and Fibersol®-2 dietary soluble fiber.
